Join me in my kitchen and put together a meal that had many possibilities.  The starter, a Chilled Roasted Tomato Soup and  Bites of Grilled Cheese Sandwich can easily be altered to be a meal by itself. A choice of Asian Cucumber and Daikon Salad or a lovely Crab Tower Salad (Layers of avocado and crab flavored with a cucumber, tomato and basil dressing) gets the meal going. The Roasted  Side of Salmon with an Orange, Honey, Dijon Glaze  can easily be downsized for 1 or 2. The side dish, Angel Hair Pasta with Lemon, Capers and Parmesan Butter Sauce is great with the salmon and it can also be turned into a stand-alone main course for 1 or 8. We’ll finish off the menu with a Cherry Garcia Ice Cream Cake Parfait layered with Cherry Garcia  Mascarpone Whipped Topping. After making all these wonderful dishes, we’ll sit down and enjoy the fruits of  your hard work. You’ll go home with handouts of the recipes and your learnings so you can recreate these dishes at home.
