1. Spaghetti and Meatballs: An easy homemade red sauce made with Italian herbs, garlic, sausage and ground beef and of course, homemade meatballs that are tender and rich with flavor. Served over your favorite pasta.
2. Lasagna: Traditional lasagna made with red sauce similar to the spaghetti sauce, layered between lasagna noodles, ricotta and Mozzarella cheese and topped off with Parmesan cheese.
3. Beef Stew: Large cubes of chuck roast simmered in beef broth and a rich wine with potatoes, onions, carrots and mushrooms .
4. Sloppy Joes: Ground beef, green peppers, onion simmered in a red sauce of tomato soup and tomato paste make an easy sandwich on nights where you only want to heat-up something for dinner. Serve with chips and vegetable tray and you are done.
5. Beef Chili: Traditional chili made with ground beef, kidney beans, onions, garlic, lots of cumin, chili powder, and cayenne pepper in a red sauce. As always, you decide on the amount of spice/heat in the chili.
6. Salmon Patties: Make and freeze the salmon patties made from canned salmon, onions and a lovely bechamel sauce and coated with fine cracker crumbs. On Dinner Day after defrosting, sauté in a skillet and in the same pan, make a fast lemon sauce with capers to serve over your favorite pasta or rice. Or… by themselves with a salad or other veggie
7.Goulash Casserole: A rich red sauce made with ground beef, onions, green pepper and Italian seasoning is layered with macaroni and cheddar and or mozzarella cheese.
8. Beef Enchiladas: A lovely red sauce flavored with Hatch chilies, onion and garlic smother either flour or corn tortillas filled with shredded beef, cheddar cheese, black olives, diced onions and roasted peppers.
