Pack the Freezer Chicken Menu

  1. Chicken Paprika: A whole chicken cut into pieces is simmered in a seasoned tomato-based sauce (onion, garlic, tomato puree, tomato sauce, sherry or wine, pepper, and paprika) and right before serving, a bit of sour cream is added.  Served over your favorite noodles.  This dish freezes very well, but if freezing, the sour cream is not added until it is reheated on dinner day, right before serving.
  2. White  Chicken Chili: Shredded roasted chicken, cannellini  beans, broth, garlic, onions, herbs, seasonings, and chilies(add much heat as you like).Freezes very well.  Shredded cheese added at table.
  3. Chicken with Ginger Lemon and Dill Soup: Chicken soup base is frozen and on dinner day you can choose to make each dinner a bit different by adding barley, rice, noodles, other vegetables
  4. Cobb au Gratin Casserole (Ingredients: Roasted Chicken, potatoes, bacon, onions,  blue cheese, rosemary, garlic and ½ ‘n ½ (low, non- fat OK too) and breadcrumbs.  These dinners are made in stages because if the milk/cream is added and then frozen, the milk product may separate and be unappealing.  The casserole dishes will be prepared to the point where milk is added, covered and frozen.  On dinner day, after defrosting, the cream/milk is poured into the casserole per recipe and baked.  Not a fan of blue cheese?  Add a bit of mozzarella or other cheese instead.
  5. Chicken and Artichoke Lasagna:  Usually smothered in a béchamel sauce but when freezing, I make a simple red sauce instead because the white sauce separates when frozen.  Lasagna noodles are smeared with ricotta and mozzarella cheese and topped with layers of chicken, artichoke hearts and a tomato red sauce.  Topped with breadcrumbs and parmesan cheese before baking. 
  6. Chicken Enchiladas:  A casserole dish of tortillas filled with roasted chicken, cheese, black olives and smothered in a  tomato, onion, seasonings, Anaheim chilis sauce (you choose the amount of heat in the sauce).
  7. Hot and Sour Soup: Homemade chicken broth is the base for the tasty soup with marinated strips of meat (your choice of pork or chicken), bamboo shoots, water chestnuts  mushrooms, carrots, egg and tofu and flavored with  rice wine vinegar, Sambal Oelek (Chili paste), sesame seed oil and soy sauce.  Your chose  the amount of heat and “sour” is  in your soup.                                                                                                                                                  
  8. This is not a choice :  Hot Oven Roasted Chicken is  seasoned first with rosemary and garlic and then roasted.  Chicken is then deboned and used in the Cobb Casserole, Lasagna, White Chicken Chili or Enchiladas above.  If there is any left it, can also be frozen in small packs to take home as bonus meals.  Recipes will be included in the take home material for Caesar Salad with  Roasted Chicken  and Grilled Sandwiches with Roasted Chicken, tomatoes, avocado and mozzarella cheese for a lighter dinner or lunch.
