Dinner Party Kitchen Classes

Included in the list are available classes that can be done upon request, given that we can get the minimum number of 4 participants. The following Dinner party menus range from casual weeknight dinners to casual entertaining and fine dining. Classes are designed to show participants how to coordinate the preparation of all the recipes in a menu so that everything gets to the table with the hot things hot and the cold things cold. Janne will pass on basic cooking skills and tips that are pertinent to each menu as they occur. Some classes are designed to learn different cooking methods and their best applications. After sitting down to enjoy the dinner(s) the group prepared, they’ll leave with the complete set of the menu’s recipes, the timeline for preparation in their home and the shopping list. Expect the classes to range from 4 – 6 hours followed by dinner, which lasts as long as the conversation goes at the dinner table.  Minimum number of participants is 4 and the max is 8.

Beef Tenderloin Holiday Dinner Party $65/person: Mushrooms and Goat Cheese Bruschetta, Beef Tenderloin with Mustard and Bacon Crust, Italian Bread Salad, Pureed Buttery Potatoes and Chocolate Peppermint Parfaits

Slowly Braised Brisket Sandwiches and Chips $60/person: Guacamole and Tortilla Chips, Slowly Braised Brisket, Asian Cucumber Salad. Spiced Potato Chips or Onion Straws and Chocolate Cupcakes with Peanut Butter Cream Frosting

Bouillabaisse Dinner Party $75/person: Hot Bacon Crackers, Bouillabaisse (Fish, clams, shrimp, crab and lobster), Jicama, Cilantro and Orange Salad, Crusty Garlic Bread and Lemon Curd/Mascarpone Cheese Whip with Lady Fingers Parfaits

Curried Lamb Shanks with Couscous $70/person: Baked Garlic with Rosemary and Bleu Cheese on French Baguette, Green Salad with Oranges and Cucumber Dressing, Curried Lamb Shanks with Ginger and Wine Sauce, Couscous with Pecans and Dried Cranberries, Rolls and Butter and Cherry and Cream Meringue Dessert

Hot Oven Roasted Chicken Dinner $60: Hot Oven Roasted Chicken, Velvet Potatoes, Spinach Salad with Hot Bacon Dressing and Mint Ice Cream Pie

Roasted Butternut Squash Ravioli Dinner $60: Roasted Butternut Squash Ravioli with Browned Butter Sage and Roasted Tomato Sauce (we’ll make the ravioli pasta), Mushroom and Goat Cheese Bruschetta, Fresh Panzanella Salad with homemade croutons and Turtle Ice Cream Parfait (drizzled with warm homemade caramel sauce)

Evening in Italy Dinner $65/person: Crab Towers, Radicchio/Porcini Mushroom Pasta (homemade) with Smoked Mozzarella Sauce, Shaved Zucchini Salad with Lemon Dressing and Tiramisu

Crab and Lobster Lasagna $65/person: Green Bean, Garlic and Parmesan Appetize, Crab and Lobster Lasagna, Tossed Green Salad with Red Wine Vinegar and Tomato Dressing, Garlic Bread and Chocolate Pinwheel Cake with Peppermint Bark Mascarpone Cheese Frosting

Winter Soups for the Soul $60: Roasted Tomato Soup with Grilled Cheese Sandwiches, Mom’s Down-home Vegetable Beef Soup and Cornbread, Hearty Chicken and Dumplings and Date Soup

BBQ Marathon $80/person:: Marinated Tri-Tip Steaks, Grilled Leg of Lamb, Brick Garlic-Rosemary Spatchcock Chicken, Lapsang Souchang Tea Smokey Flavored Ribs, Salmon with Soy/Brown Sugar Rub and also serving Tomato Mozzarella Au Gratin and Fruit Cobbler

Steaming, Poaching, Braising and Combination Cooking Methods Explored $60/person: Cannellini Bean Bruschetta, Chicken, Mushroom and Ricotta Pinwheels with Roasted Tomato and Artichoke Sauce over Zucchini Noodles, Tilapia, Shrimp Ricotta Pinwheels with Picata Sauce.                  

Veggies and Fruits -Myths and Mysteries $60/person:Learn tips for which ones to buy or leave behind, how to best clean and store them so their nutrients are preserved and they last longer.   Should they be stored in plastic wrap or no wrap at all?  In high or low humidity, with all other veggies and fruit in the refrigerator….or keep at room temp? Mushroom and Goat Cheese Bruschetta, Avocado Toasts with Toppings, Grilled Radicchio and Blue Cheese Drizzle Dressing,Eggplant Lasagna with “Kitchen Sink” Salad, Spaghetti Squash with Chicken Breast, Sundried Tomato Basil Sauce and Frozen Banana Sundaes and Chai Pudding with fresh Fruit Compote.

Kitchen Marathon Classes

Learn how to spend an afternoon in your kitchen and coordinate the preparation of several meals with similar ingredients. Put a number of meals in your freezer to pull out for dinner on those days when you are just too done in to cook. After preparing either the Chicken or Meat Marathon dishes, we’ll sit down and sample your choices…and divide any leftovers among the 4 or more participants to take home to their freezer.

Chicken Marathon Day $65/person: (minimum of 4 participants required)

Hot Oven Roasted Chicken is always included in this menu. Chose 3 additional dishes from this list: Chicken Paprika, White Chili with Chicken and Beans , Root Beer Stand Chicken Sandwiches, Chicken Enchiladas and Chicken and Artichoke Lasagna, Lastly, choose one of these soups: Chicken and Dumplings, Chicken with Ginger, Lemon and Dill Soup or Hot and Sour Soup.

Meat Marathon $75/person: (minimum of 4 participants required)

Choose 3 dishes from the list: Beef Chili, traditional Lasagna, Spaghetti and Meatballs, Beef Stew, Sloppy Joes and Beef Enchiladas.

Pack the Freezer Marathon $150 for Individual class: Spend 3-4 hours with Janne in her kitchen and choose 3 dishes from either the Meat or Chicken marathon menus above but instead of sampling them, all 24 servings will packaged and freezer ready in serving portions that meet your family’s needs.

Pack the Freezer Marathon for Two $100/person Participants must agree on the 3 menu choices from Meat or Chicken Marathon Menus above prior to the Kitchen Class but each of their 12 servings can be packaged to meet their individual needs. Expect to spend 3- 4 hours preparing your 3 recipes.

Pack the Freezer Mega Marathon $225 for individual class but choose 5 dishes from the Meat or Chicken Marathon Menus above and put all 40 servings in your freezer, packaged to meet your family’s needs. Expect to spend 5- 6 hours with Janne in her kitchen.

Pack the Freezer Mega Marathon for Two $120/person: Participants must agree on 5 menu choices from the Meat or Chicken Marathon Menus above but each of their 20 servings can be packaged to meet their individual needs. Expect to spend 5-6 hours with Janne in her kitchen.
